2 cups vegetables of choice
(good choices include shredded cabbage, carrots, kale, and broccoli)
1 to 2 cups grain of choice
(good choices include brown rice, wheat berries, and quinoa)
1 medium fruit of choice, chopped
(good choices include pear, apple, and jicama)
1/3 cup thawed juice concentrate
(good choices include orange, pineapple, and apple)
1/3 cup mayonnaise of choice
1 tsp sweetener of choice (optional)
1/4 tsp salt
1/4 cup nuts or seeds of choice (optional)
1/4 cup dried fruit of choice (optional)
1. In a large bowl, combine the vegetables, grain, fresh fruit, and dried fruit.
2. In a small bowl, combine the juice, mayonnaise, sweetener, and salt. Pour this mixture over the large bowl mixture and toss to coat.
3. Cover and refrigerate until ready to serve. Stir in nuts and seeds right before serving. (optional)
