Veggie Gift

Have you ever thought of vegetables as a gift?

I didn't for most of my life, but the more I learn about them, the more thankful I am for them.  I would venture to say that all of God's foods, in their natural state, are super foods, however non-starchy veggies are pretty high on the list.  I’m specifically talking about savory, non-starchy vegetables. 

Starchy veggies include white potatoes, sweet potatoes, most winter squashes (pumpkin, acorn, butternut, etc.), corn, and green peas, which by the way, have nutritional value, they are just not what we are talking about today.  So, non-starchy veggies include all of the other veggies you might find on your plate.

The main reason non-starchy veggies are a superfood, is because they are high in micro-nutrients while being low in calories.  This means that they give you the healing properties of micro-nutrients, such as disease prevention, fighting off illness, and improving appearance, and at the same time, assist in weight-loss because they are low in calories.
